Just ahead of its official unveiling, we thought we’d provide a sneak peek of a new café we’re pretty excited to be working with. Next Monday will see the doors open at Top Paddock gracing the Yarra end of Church St, Melbourne.

Top Paddock is the latest and greatest venture from a team Five Senses has been proud to work with through a number of Melbourne’s trend setting and award winning cafes; most recently Two Birds One Stone. Fronted by wonder-trio Nathan, Ben, Diamond and now joined by Sam Slattery, Top Paddock represents the culmination of proven expertise joining with an opportunity to explore some new exciting approaches. Chef Jesse McTavish will oversee the service of a fine menu, which for the first time in the groups history, will be branching out into an evening offering twice a week.

Pride of place in the central café space is a barista bar the envy of any specialty focussed barista. The seven meter long bar features a white 4 group Synesso Hydra, Marco Undercounter boiler, pour over brew station and even a Clover. Always ones to embrace new technology the Top Paddock team have this time installed the recently released Juggler milk system, further streamlining coffee production. A second coffee station sees a 3 group Synesso servicing the takeaway crowd alongside a selection of delicious grab and go food prepared each morning.

And what about the coffee menu?? Head barista, Elika Rowell, in conjunction with Five Senses, has created a Top Paddock seasonal house blend featuring a back bone of Ethiopian Sidama, rounded out and given further complexity by our Panama Hortigal and Honduran San Vicente. It’s got great advanced sweetness, crisp fresh acidity and just enough chocolaty creamy body….delicious. Rotating single origin offerings from select small batch lots and rare and interesting others will run alongside the house blend further diversifying what’s on offer for espresso lovers.

The filter coffee programme will initially focus on pour over, two choices available from the best and freshest lots the specialty coffee world has to offer. Brew methods will be added and matched to allow the best expression of each particular coffee selected for the menu.

The luxury of space allows another grand addition the coffee programme at Top Paddock. Tucked up at the rear of the central café space is a 1kg Geisen coffee roaster. The team will use the inhouse roaster to further stretch the coffee menu and enhance the connection between a high quality raw produce and their delicious experience in the cup.

There’s some big reasons to get excited about this addition to the Melbourne scene and we’re pumped about embarking on this new adventure with the Top Paddock crew — hope you all head on down for a tasty coffee or two!
