Brett gets used to home-made lunches

At lunchtime on his first day at Five Senses, Brett enquired, “What time is the chef bringing lunch today?” After scoffing and laughing at his wide-eyed naivety, we discovered that for 15 years, Brett had restaurant meals prepared for him by chefs each day. Hmmm, more jealousy than laughter from us at that stage.
Brett dazzles us with the names of famous chefs he has worked with and famous people he has served. He regales us with entertaining stories of the disasters he has had to manage and the hilarious situations that tend to happen in the hospitality industry when you mix food, wine and people.
Needless to say, Brett is a cool cucumber when it comes to handling stressful situations and now manages our ever-expanding operations and production department in Victoria with ease and finesse. Brett has taken it upon himself to keep the Five Senses crew ‘inspired and engaged’ and entertains us each day.
Melbournians will be familiar with the Regent Theatre, Victorian Arts Centre and Melbourne University, busy and bustling places. You may have been lucky enough to have had Brett serve you up a coffee martini as a pre-show drink, or a chermoula-crusted salmon as a main course.
Brett owned and operated two restaurants in Melbourne and won awards in The Age Good Food Guide for two years running. His well-educated and discerning palate makes him a critical member of the tasting team.
When quizzed, Brett says that his favourite coffee ‘of the moment’ is the Indonesian Bali Gunung Batur for its sweet macadamia nut tones.
Oh — and Brett now brings his lunch from home like the rest of us, and frequently wins the ‘Best and Most Creative Lunch from Home’ competition.
