Five Senses is proud to call Pillar of Salt one of our latest success stories. As Melbourne foodie website Broadsheet noted, “Pillar of Salt has already found a sense of familiarity; a relaxed, friendly atmosphere that makes you want to be a regular.” Brothers Matt and Kael are already enjoying some serious buzz in the blogosphere, but don’t have much time to read what’s being written as their new venture is so busy.

So, what’s the secret to nailing it right from the get go? Well, when you have great design, a top location, a team of industry professionals and great coffee, success is almost certain.

Church Street in Richmond is a familiar location to any Melburnian and it deserves a café like Pillar of Salt. The courtyard is as large as the interior. The huge folding windows that open onto the footpath set the tone with a warm welcome and relaxed atmosphere. With its bustling retail and business location, it’s almost surprising just how relaxed the vibe is inside, even with a full house. Noise seems to drift out onto the busy Richmond streets rather than drown out conversation. Pillar of Salt is sheltered from harsh weather, but opens its windows to let in the soft gentle breezes that Melbourne (sometimes) offers.

There are plenty of prepared fresh food offerings from the cabinet. However, if you have the time to relax over lunch, try the lamb burgers with red onion, fetta, cumin aioli and hand cut chips. An awesome dish that is sure to appeal.

A crack team of baristas is on the Synesso, with “micro lot” coffees and house blends on offer. Coffee service is fast and you can expect some impressive artwork. Five Senses’ famous Harvest blend is celebrated at Pillar. Milk coffees are smooth, balanced with some subtle chocolatey tones.
