Leonid Ramirez, Black Honey
Apricot & stewed peach, juicy body with a lingering brown sugar aftertaste.
Beating the hype, the black honey process aims to increase the depth of fruit and flavour. Leaving additional mucilage on the pulped bean and reducing the amount of time the beans are turned on the drying patio, encourages increased fermentation. In turn, this process uniquely impacts the coffee’s characteristics, especially in comparison with its washed counterpart. Expect apricot and stewed peach, and a juicy body with a lingering brown sugar aftertaste.
