It’s been great to see so many of Australia’s top cafés join the brewed coffee revolution. The resurgence of black coffee and the emergence of some top notch new brewing equipment has created a huge buzz in the industry, and that enthusiasm to experiment is now filtering down to those of us who are passionate about what we drink at home.

Along with the Clever Coffee Dripper, the syphon is a hugely popular piece of equipment for home users, not least because it looks so darned impressive! While there are a huge variety of opinions about the best method for brewing syphon coffee, there’s little scientific backing. If you’ve got a syphon, or you’ve been thinking about purchasing one, but you’re a little daunted by the science-lab-look of this beautiful piece of equipment, use the photos above as a simple guide that you can tweak to your own personal preference with practice.

And if this whets your appetite, you’ll love Scott Rao’s book Everything but Espresso. Unlike many guides, Scott explores the science behind brewing. This book is the definitive guide to all non-espresso brewing methods, from plunger (French Press) to filter and, of course, syphon.
